Salmon is one of my favorite foods. I cook it often and will post MANY recipes. Up until a year ago, I refused to eat fish. Honestly, fish would gross me out. Although MANY people grow up next to the beach and witness fishermen catch and cut up fish; it TRAUMATIZED me! So at 28 years old (yes… that is how long it took me to get over my fear of fish), I began eating salmon. Instantly this became a FAVORITE of mine! Who knew?
I forced myself to eat salmon for the health benefits. Its AMAZING for you! This fish does everything from improve your cognitive functions, has a TON of vitamins and minerals (A, B, D, calcium and iron), and has loads of Omega-3s. Did you also know that Salmon helps boost your metabolism and helps give you gorgeous hair and nails!?! So essentially I couldn’t refuse a food that would make me smarter, healthier and prettier!
Salmon is BEYOND EASY to cook. Its delicious and juicy naturally, so you barely have to do anything! Usually salt, pepper and lemon is enough!
This is one of my favorite recipes:
CARAMELIZED FENNEL AND CILANTRO SALMON:
- Buy a HUGE piece of salmon and cut into 2-4 ounce pieces (about the size of a deck of cards… larger if the salmon is thin).
- Slice oranges or lemons and cover the bottom of a baking sheet with those slices (I find this gives the salmon a nice zesty flavor)
- Place the salmon slices on top of the lemons
- Squeeze fresh lemons over the salmon
- Sprinkle some sea salt and black pepper over the salmon and rub it in gently.
- Next, finely chop up cilantro and COVER your salmon with it (Cilantro is amazing because it naturally detoxes you, provides a nice flavor, and binds to any mercury in your body and removes that from your body!)
- Bake the salmon in the oven for 30 minutes at 375 degrees (until it begins to flake but does NOT dry).
- Chop up fennel into long thin slices (think onions in your burger!)
- Spray a frying pan with Extra Virgin olive oil
- Toss in the fennel and stir frequently at medium heat until the fennel becomes caramelized (again, similar texture and look as onions).
- Once you remove the salmon from the oven generously top each slice with the fennel.
- I love serving this with brown rice and kale/goji berry or cranberry/ and walnut salad
Caramelized fennel will have a slight licorice taste which is so refreshing combined with the lemon and cilantro! Perfect for spring!
